Hotels, restaurants, and other establishments that serve food have high standards to maintain — standards of their own, their guests, and the department of health. Maintaining a clean and consistent image from the front of the house to the back is a challenge, even for the most reputable restaurants and hotels.
It’s not unusual to find restaurants, hotels, casinos, schools and even hospitals with spotless kitchens inside, but something to hide out-back: odor-, grease- and grime-ridden back docks that are breeding grounds for rats, mice, crawling insects and flies.
